Here is a light salad that will leave you feeling satisfied and virtuous!
For this salad, I layered a series of veggies to build a balanced plate of carbohydrates, protein and fat.
I started with a bed of puy lentils, then added a layer of finely chopped green pepper, cherry tomatoes, sweet corn, hummus, topped with roast cashews and a drizzle of olive oil.
Surprisingly satisfying and sooo good!
