Ok the recipe calls for oats, coconut, spices and all things nice but if you’re anything like me, the word chocolate usually equals food porn! These pancakes won’t let you down. The recipe makes 12 – eyes bigger than tummy moment – I got through 3 and I gave up!! So very filling, chocolate, protein pancakes.
You will need the following ingredients:
2 Ripe Bananas, plus a few slices for serving
2 Eggs (or 3 Tablespoons chia mixed with 9 Tablespoons water)
1 Cup Oats
Flour mix: I make a container of this ahead of time, so when I make pancakes, which is usually once a week, it’s there & ready for me. For this recipe you need, 1/2 Cup Almond Flour, 1/2 Cup Buckwheat Flour, 1/4 Cup Corn Starch.
2 Scoops Protein Powder
1/2 Cup Coconut
1/4 Cup Chocolate Chips (plus a few more for serving)
2 Teaspoons Baking Powder
2 Tablespoons Flaxseed
1 Teaspoon Vanilla Extract
2 Tablespoons Almond Butter or Nut Butter of your choice
2 Tablespoons Coconut Oil, melted
1-2 Cups Almond/Oat Milk, keep adding until you reach the right consistency
Himalayan Rock Salt, just a pinch
Maple Syrup for serving
In a blender, add the banana and eggs/chia and blend until well combined. I like to add 1 cup of oat milk here and give the mixture a blitz, then add the dry ingredients, oats, flour mix, protein powder, coconut, chocolate chips, baking powder, flaxseed, coconut oil, almond butter, vanilla extract, salt and another 1/2 cup of almond milk. Blend until well combined and add more almond milk until it reaches the desired consistency.
Oil the pan, place over a medium heat and once the pan is ready, scoop 1/4 cup portions into it. Cook the pancakes until golden brown.
Serve on their own (yes they are delicious plain) or slice up a banana, sprinkle a few chocolate chips on top and drizzle with maple syrup.
