This is what we will be having for Christmas Day lunch with a few other delights that I will share with you over the next day or so…
First thing is to roast a cauliflower!
Strip away the leaves, wash well and pop into a baking tray.
Sprinkle ground cumin, ground chilli and Himalayan rock salt on top, drizzle with olive oil and roast for approx 25 minutes at 200 degrees.
Once the cauliflower is cooked, remove from the oven and slice in half, vertically. Once divided into two, slice each piece horizontally and place a piece of goats cheese in the middle, pop the top back on and place it back into the warm oven for a few minutes, just to melt the cheese a little.
Prepare your plate with other veggies or mixed salad, place the cauliflower into the plate to serve and tuck in! This is lovely the next day too…
