This soup is amazing at helping the digestive system along, perfect during a cleanse.
You will need the following :
- 4 carrots – chopped
- 1/2 head of celery – chopped
- 1 medium onion – cut into 1/4’s
- 2 cloves of garlic
- 3.5 litres of water
- 3 sprigs of fresh parsley, chopped
- Large handful of spinach, shredded
- 1/2 tsp cayenne pepper
- Fresh lemon juice
Place the carrots, celery, onion and garlic into a large saucepan. Add the water and bring it to the boil. Simmer over a low heat for 20 minutes. Add the parsley and spinach and simmer for another 10 minutes. Remove from the heat and pour the soup through a sieve into a jug, throw the vegetables away.
Season with cayenne pepper and lemon juice if you like it hot.
