Spinach and Chilli Tofu ‘Omelette’

It’s good for breakfast, lunch or dinner to be honest and is just as good cold as it is hot.

You will need:

2 packets of silken tofu

Salt and pepper to taste

pinch of Turmeric or Saffron

a handful of chopped Spring onions

1 Green chilli, chopped

a couple of handfuls of Spinach, peas & any other green veg you have lying around!

Blend the tofu with salt, pepper and turmeric/saffron. Heat some oil in a pan and add the chilli and onions. Saute for a few minutes, add the veg & continue to cook for a couple of minutes until the spinach wilts.

Pour the tofu mixture in and fry on medium-high heat for about 10 minutes (watching it doesn’t burn – I have done this!) then place under a medium grill for another 10 minutes until the top is golden brown.

Be warned – this ‘omelette’ is a little fragile. You can add a couple of tablespoons of spelt flour to help bind it if you want.

Serve with either a green salad or steamed green beans/broccoli etc.
